A vegetable curry with a spinach based gravy

Ingredients
- 1 cupPotatoes, diced
 - 1 cupPaneer, diced
 - 1 cupCarrots, diced
 - 1 cupCapsicum, diced
 - 1 cupBroccoli
 - 1 cupPeas
 - 1 cupBeans, sliced
 - 400 gmsOnions, diced
 - 250 gmsSpinach
 - 100 mlCream
 - 50 gmsGinger, minced
 - 50 gmsGarlic, minced
 - 500 gmsTomatoes, diced
 - 4Green chillies
 - 1 bunchCoriander leaves
 - ½ cupCashews
 - 1 tspChilli powder
 - 2 tspCoriander powder
 - 1 tspCumin powder
 - ½ tspTurmeric
 
Preparation
- Parboil all the diced vegetables
 - Parboil spinach and grind with green chillies, cashews and fresh coriander
 - Heat oil and fry diced onions
 - Add ginger and garlic and fry
 - Add diced tomatoes and simmer
 - Once most of the liquid is gone, add chilli powder, coriander powder, cumin powder, turmeric
 - Fry till the oil separates
 - Add all the diced and parboiled vegetable and diced paneer
 - Add 2 cups of water and simmer for 5 minutes
 - Add cream and stir
