Besan Burfi

Besan Burfi

Ingredients

  • 1 cupBesan (gram flour)
  • 1 cupSugar
  • ½ cupWater
  • ¼ cupGhee
  • 3Cardamoms, crushed
  • ¼ cupBroken cashews

Preparation

  1. Pan fry broken cashews in a little ghee till slightly brown
  2. Roast besan till a roasted aroma but don't let it burn. Keep aside
  3. Add water and crushed cardamom to the sugar and heat to make a syrup
  4. Add besan and mix
  5. Melt ghee and add gradually, leaving a little aside
  6. Heat mixture. constantly stirring till it separates from the edge of the pan and becomes a mass
  7. Pull a small amount and put in a plate to check if it solidifies when cold
  8. Pour on to a flat plate lined with grease paper
  9. Put another sheet of grease paper on top and flatten using a rolling pin
  10. Remove top grease paper and sprinkle cashews and replace paper
  11. Flatten to push cashews in
  12. After it cools a little but still soft, make light cuts with a knife
  13. After it hardens completely, break into pieces
