Dulce de Leche Ice cream

Dulce de Leche Ice cream

Ingredients

  • 400 mlCan of condensed milk
  • 3 cupsMilk
  • 4 tbspSugar

Preparation

  1. Make a can of dulce de leche as per the instructions below
  2. Warm milk and dissolve the dulce de leche. It does not have to be completely mixed.
  3. Add sugar and mix
  4. Store in the refrigerator for a few hours
  5. Use an egg beater to mix the chilled mixture and work some air into it
  6. Place in ice cream maker and prepare as per the instructions for your appliance

It is not often that I have to add safety warning to my recipes but this time around, I think I have to. So here goes - this stuff may be dangerous, do it at your own risk.

Dulce de Leche is caramalised milk with an exquisite flavour. My method for making it is simple, if a bit dangerous. Take a 400ml can of sweetened condensed milk. Place it in a pressure cooker with 2 cups of water. Close it and put it on heat. At some point, it will give out a burst of steam. At this point, put it on simmer so that it just burbles along. Simmer it for 45 minutes. At the end of this time, shut the heat off. Do not open the pressure cooker at this point! Just let it cool down. When it is completely cooled down - with my pressure cooker, the lid falls open at this stage, take out the can and wait for it to be cool to touch. Then open it. Inside you will find the cream or brown coloured goodness of dulce de leche. I have used this method more than once and I haven't had an 'incident' yet.
