A Malaysian beef curry

Ingredients
- 20Dried red chillies
 - 250 gmsShallots
 - 50 gmsGarlic
 - 50 gmsGinger
 - 50 gmsGalangal
 - 1Lemon grass
 - ½ tspTurmeric powder
 - 1 pieceCinnamon
 - 4Cloves
 - 4Cardamom
 - 2Star Anise
 - 1 kgBeef, diced
 - 4Kaffir lime leaves
 - 400 mlCoconut milk
 - 1 cupGrated coconut
 - 2 tbspMalaysian meat powder
 - 1 tbspPalm sugar
 - 2 tbspKecap manis
 - 1 tbspTamarind paste
 - Oil
 - Salt
 
Preparation
- Soak dried red chillies in hot water for 15 minutes
 - Grind chillies, shallots, garlic, ginger, galangal, lemon grass, turmeric with a little water
 - Toast grated coconut till slightly brown
 - Heat oil and add lightly crushed cinnamon, cardamom, star anise and cloves and heat till they crackle
 - Add ground paste and fry for 15 minutes
 - Add beef, coconut milk, meat powder, palm sugar, toasted coconut, tamarind, kecap manis with some water
 - Cut kaffir lime leaves in half and add
 - Simmer for about 2 hours adding water if it gets too dry. Use a simmer plate if you have one.
