Beef Rendang

A Malaysian beef curry

Ingredients

  • 20Dried red chillies
  • 250 gmsShallots
  • 50 gmsGarlic
  • 50 gmsGinger
  • 50 gmsGalangal
  • 1Lemon grass
  • ½ tspTurmeric powder
  •  
  • 1 pieceCinnamon
  • 4Cloves
  • 4Cardamom
  • 2Star Anise
  •  
  • 1 kgBeef, diced
  • 4Kaffir lime leaves
  • 400 mlCoconut milk
  • 1 cupGrated coconut
  • 2 tbspMalaysian meat powder
  • 1 tbspPalm sugar
  • 2 tbspKecap manis
  • 1 tbspTamarind paste
  •  Oil
  •  Salt

Preparation

  1. Soak dried red chillies in hot water for 15 minutes
  2. Grind chillies, shallots, garlic, ginger, galangal, lemon grass, turmeric with a little water
  3. Toast grated coconut till slightly brown
  4. Heat oil and add lightly crushed cinnamon, cardamom, star anise and cloves and heat till they crackle
  5. Add ground paste and fry for 15 minutes
  6. Add beef, coconut milk, meat powder, palm sugar, toasted coconut, tamarind, kecap manis with some water
  7. Cut kaffir lime leaves in half and add
  8. Simmer for about 2 hours adding water if it gets too dry. Use a simmer plate if you have one.
