A spinach and cottage cheese curry

Ingredients
- 500 gmsPaneer
 - 500 gmsOnions, diced
 - 400 gmsTomatoes, diced
 - 500 gmsSpinach
 - 50 gmsGinger, minced
 - 50 gmsGarlic, minced
 - 4Green chillies, slit
 - 1 tspChilli powder
 - ½ tspTurmeric powder
 - 1 tspCumin powder
 - 2 tspCoriander powder
 - 1 tspFenugreek seeds
 - 1 tspShahjeera
 
Preparation
- Add oil to a pan and heat. Cut paneer into squares and fry lightly. Remove.
 - Add more oil and add diced onions and fry till soft
 - Add ginger, garlic and 2 green chillies and fry
 - Add chopped tomatoes, shahjeera, fenugreek seeds and spice powders
 - Fry till tomatoes are cooked adding water if needed
 - Add spinach and toss till leaves are wilted
 - Remove and grind to the required fineness. I prefer a coarse grind rather than turning it into a paste.
 - Clean pan, add oil and heat. Add remaining green chillies and fry
 - Add ground spinach and paneer and add salt to taste
 - Simmer till heated through
