Watermelon Ice Cream

Watermelon flavoured ice cream

Watermelon Ice Cream

Ingredients

  • 2 kgsWatermelon
  • 2Egg whites
  • 600 mlCream
  • ½ cupSugar

Preparation

  1. Cut away the rind and chop the watermelon into pieces
  2. Juice it in a blender or food processor and chill
  3. Beat the two egg whites
  4. Add cream and sugar and beat some more
  5. Add the watermelon juice and mix gently
  6. Place in an ice cream maker, in batches if necessary

This was an attempt at making a watermelon sorbet. I started with a full watermelon - over 4 kgs. I juiced about half of it and added several egg whites but could not get the mixture to be light and airy. I did finally make the batch but it was more granita than sorbet. Also, don't bother straining the juice. Once juiced, there is no pulp to speak of. The only option was to try and turn the remaining juice into ice cream. With the cream in the mix, it was a lot better and the ice cream turned out OK. Even after several days, the ice cream did not harden. The 'sorbet', however, had to be scraped out with a fork. It wasn't hard as I originally expected but it was harder than any sorbet I have made.
