Bread Salad

Bread Salad

Ingredients

  • 4 slicesBread
  • 100 gmsChopped bacon (optional)
  • 200 gmsCherry tomatoes
  • 1 cupBaby spinach leaves
  • 2 tbspBalsamic vinegar
  • 2 tbspExtra virgin olive oil
  • 100 gmsGrated parmesan

Preparation

  1. Tear bread into small pieces. Place on oven tray and spray with olive oil.
  2. Heat in oven at 180°C for 15 minutes or till lightly toasted. Remove and let cool.
  3. If using bacon, fry on a pan
  4. Pan fry cherry tomatoes with a little oil till slightly soft and the skin starts to wrinkle
  5. Mix bread, bacon, tomatoes, spinach in a large bowl
  6. Drizzle with olive oil and balsamic vinegar
  7. Add freshly grated parmesan cheese

This is a great way to turn leftover bread into a delicious salad. The salad makes a nice side dish, especially for a meat based BBQ dish. It complements it even better when the meat based dish is just meat and nothing else. I always make this salad to go with the Piri Piri Chicken.

The chopped bacon is optional, allowing me to tag it as one of the rare 'Vegetarian' dishes on this blog. Use the cherry tomatoes as they are, for a fresher taste but I prefer them slightly pan fried. I am using only four slices of bread. If you are hoping to use large quantities of leftover bread, you will end up with a humongous quantity of bread salad and you might as well make a meal of it by adding some grilled chicken.
