Rose flavoured ice cream

Ingredients
- 1 cupThickened cream
 - 1 cupMilk
 - ½ cupSugar
 - 1 tspRose essence
 - 4 dropsPink colouring
 
Preparation
- Mix all ingredients in a bowl and beat with an egg beater till the sugar is dissolved
 - Chill for 1 hour
 - Beat mixture again and place in an ice cream maker
 
It may seem a bit strange to call Rose ice cream an Indian dish, notwithstanding the rose flavour. But in India, far from it being a slightly exotic flavour, no list of ice cream flavours is complete without it. It is also one of the popular flavours used in a Falooda which may use rose syrup as the base and is then topped with rose ice cream.
