Ingredients
- 4Chicken Maryland
 - 300 gmsOnions, diced
 - 50 gmsGarlic, minced
 - 1 cupWhite wine
 - 400 gmsCanned tomatoes
 - 500 mlChicken stock
 - ½ cupPitted olives
 - 1 tspChilli flakes
 - Soft Polenta
 - 200 gmsPolenta
 - 75 gmsButter
 - 100 gmsParmesan, grated
 - 50 gmsTaleggio
 - Oil
 - Salt
 
Preparation
- Heat oil and brown chicken on both sides in batches
 - Remove chicken and add onion and garlic
 - Fry onion till soft
 - Add chicken, chilli flakes and then the wine and simmer for 10 minutes
 - Add tomatoes, chicken stock, olives and simmer till chicken is tender
 - Heat 1.5L water till it is boiling
 - Slowly pour in the polenta constantly stirring
 - Add salt and keep stirring. Reduce heat and simmer
 - Add cheese and ground pepper
