Chicken Cacciatore with Polenta

Chicken Cacciatore

Ingredients

  • 4Chicken Maryland
  • 300 gmsOnions, diced
  • 50 gmsGarlic, minced
  • 1 cupWhite wine
  • 400 gmsCanned tomatoes
  • 500 mlChicken stock
  • ½ cupPitted olives
  • 1 tspChilli flakes
  • Soft Polenta
  • 200 gmsPolenta
  • 75 gmsButter
  • 100 gmsParmesan, grated
  • 50 gmsTaleggio
  •  
  • Oil
  • Salt

Preparation

  1. Heat oil and brown chicken on both sides in batches
  2. Remove chicken and add onion and garlic
  3. Fry onion till soft
  4. Add chicken, chilli flakes and then the wine and simmer for 10 minutes
  5. Add tomatoes, chicken stock, olives and simmer till chicken is tender

  6. Heat 1.5L water till it is boiling
  7. Slowly pour in the polenta constantly stirring
  8. Add salt and keep stirring. Reduce heat and simmer
  9. Add cheese and ground pepper
