Brioche and blue cheese burgers

Ingredients
- 400 gmsGround beef
- 1 tspMustard
- ½ tspSalt
- ½ tspPepper
- 6Bacon rashers
- 4Brioche buns
- 200 gmsOnions, sliced and fried
- 8 tbspBlue cheese
- 4 tbspBBQ sauce
Preparation
- Mix ground beef, mustard, salt and pepper
- Roll into balls and flatten and fry on an oiled pan on both sides
- Fry bacon rashers on pan
- Toast brioche
- Put bacon rashers on half and drizzle with BBQ sauce
- Put beef pattie on the other half and crumble some blue cheese on
- Lightly grill both halves and serve
I am not a great fan of a brioche in a burger - they are a bit flimsy. But Cub was keen on this new trend. It seemed like a good change from the usual burgers. But he does not like blue cheese and got a nicely grilled Maasdam instead.
Brioche buns have a high level of sugar and brown (and burn) very easily - so toast with care. They are not very strong and should ideally be underloaded. A pretty good excuse for giving the salad a miss!
