Pan fried fish with sauce

Ingredients
- 800 gmsBarramundi fillets, skin on
 - 50 gmsButter
 - 200 gmsLeek, sliced
 - 50 gmsGarlic, chopped
 - 25 gmsGinger, chopped
 - 2Green chillies, sliced
 - 300 mlCream
 - ¼ cupPecorino cheese, grated
 - ½ tspPepper powder
 - 2 tbspChives, chopped
 - Ghee
 - Salt
 
Preparation
- Heat butter in a pan, add leek, garlic, ginger, green chillies and fry till soft
 - Remove and add ghee to the pan
 - Place barramundi skin down and with a weight on top till the skin is crisp
 - Turn over fish pieces, add fried leeks, cream, grated cheese, pepper and salt
 - Gently shake pan and place in oven at 180°C for 15 mins
 - Remove, garnish with chopped chives
