Barramundi in Cheese Sauce

Ham hock risotto

Ingredients

  • 800 gmsBarramundi fillets, skin on
  • 50 gmsButter
  • 200 gmsLeek, sliced
  • 50 gmsGarlic, chopped
  • 25 gmsGinger, chopped
  • 2Green chillies, sliced
  • 300 mlCream
  • ¼ cupPecorino cheese, grated
  • ½ tspPepper powder
  • 2 tbspChives, chopped
  • Ghee
  • Salt

Preparation

  1. Heat butter in a pan, add leek, garlic, ginger, green chillies and fry till soft
  2. Remove and add ghee to the pan
  3. Place barramundi skin down and with a weight on top till the skin is crisp
  4. Turn over fish pieces, add fried leeks, cream, grated cheese, pepper and salt
  5. Gently shake pan and place in oven at 180°C for 15 mins
  6. Remove, garnish with chopped chives
