Babi Kecap

A pork dish served with Nasi Lemak

Babi Kecap-Nasi Lemak

Ingredients

  • 1 kgPork belly, diced
  • 200 gmsEschallots, sliced
  • 50 gmsGarlic, minced
  • 25 gmsGinger, cut into straws
  • 4Red chillies, sliced
  • 2 tbspDried shrimp, soked in water
  • 3 tbspFish sauce
  • 3 tbspSoy sauce
  • 4 tbspKecap Manis
  • Oil
  • Salt

Preparation

  1. Heat 1 tbsp of oil in a pan and fry pork till brown
  2. Add sliced eschallots, garlic, ginger, chillies, shrimp and fry
  3. Add fish sauce, soy sauce, kecap manis
  4. Add 1 cup water and simmer for 40 mins

Kecap Manis is a sweeter version of soy sauce, used in Indonesian cooking. In a bind, soy sauce and some palm sugar may just do. As shown in the main photo, it is served with Nasi Lemak and the usual accompaniments - sliced cucumber, toasted peanuts, dried fish (ikan bilis). Nasi Lemak is a rice cooked in water and coconut milk. Pandan leaves may also be added.
