A pork dish served with Nasi Lemak

Ingredients
- 1 kgPork belly, diced
 - 200 gmsEschallots, sliced
 - 50 gmsGarlic, minced
 - 25 gmsGinger, cut into straws
 - 4Red chillies, sliced
 - 2 tbspDried shrimp, soked in water
 - 3 tbspFish sauce
 - 3 tbspSoy sauce
 - 4 tbspKecap Manis
 - Oil
 - Salt
 
Preparation
- Heat 1 tbsp of oil in a pan and fry pork till brown
 - Add sliced eschallots, garlic, ginger, chillies, shrimp and fry
 - Add fish sauce, soy sauce, kecap manis
 - Add 1 cup water and simmer for 40 mins
 
Kecap Manis is a sweeter version of soy sauce, used in Indonesian cooking. In a bind, soy sauce and some palm sugar may just do. As shown in the main photo, it is served with Nasi Lemak and the usual accompaniments - sliced cucumber, toasted peanuts, dried fish (ikan bilis). Nasi Lemak is a rice cooked in water and coconut milk. Pandan leaves may also be added.
