A cracked wheat side dish

Ingredients
- 2 cupsCoarse Bulghur
- 2 tbspOil
- 250 gmsOnion, sliced
- 200 gmsChopped tomatoes
- 1 tspCumin powder
- 2 cupsChicken stock
- 2 cupsWater
- Salt
Preparation
- Heat oil (or duck fat)
- Add sliced onions and fry till soft
- Add chopped tomatoes, cumin and stir
- Add chicken stock and water
- Add bulghur and stir
- Simmer till bulghur is cooked and all liquid is absorbed. Add more water if liquid is absorbed but the bulghur is not cooked.
This goes well with the Duck and Date Tagine
