Ingredients

  • 500 gmsPork, diced
  • 500 gmsPork belly, diced
  • 400 gmsOnions
  • 20Kashmiri chillies
  • 25 gmsGinger
  • 50 gmsGarlic
  • 1 pieceCinnamon
  • 3Cloves
  • 1 tspMustard seeds
  • 1 tspCumin seeds
  • ½ tspPepper
  • 2 tspCoriander seeds
  • ½ tspTurmeric powder
  • 1 tspTamarind
  • 2 tbspVinegar
  • 2 tbspJaggery
  • 2 tspSalt

Preparation

  1. Roast kashmiri chillies, sliced ginger and garlic, cinnamon, cloves, mustard seeds, cumin seeds, pepper, coriander seeds, turmeric
  2. Grind with tamarind, vinegar, jaggery, salt and some water
  3. Marinate pork pieces overnight
  4. Grind onions to paste
  5. Heat oil in a pan and add pork, ground onions
  6. Slow simmer for 1 hour
