Spicy chicken with a side salad

Ingredients
- 1.2 kgsChicken tenderloins
 - 2 tbspOlive oil
 - Cajun Spice Mix
 - 1 tbspChilli powder
 - 1 tbspMustard powder
 - 1 tbspCumin powder
 - 1 tbspDried garlic flakes
 - 1 tbspDried onion flakes
 - 1 tspPepper powder
 - 1 tspPaprika
 - 1 tspSalt
 - Corn Salsa
 - 200 gmsCorn kernels
 - 200 gmsRed capsicum, diced
 - 200 gmsTomatoes, diced
 - 1 bunchCoriander
 - 2 tbspOlive oil
 - 2 tbspLemon juice
 - ½ cupBreadcrumbs
 - 1 cupMayonnaise
 
Preparation
- Mix all ingredients for the cajun spice mix and dry grind fine
 - Put chicken tenderloins in a bag and drizzle with the olive oil
 - Add half the spice mix and toss till chicken is coated
 - Place on shallow baking tray, cover with foil and roast in oven at 200°C for 20 minutes
 - Turn over, spray with oil and roast uncovered for another 10 minutes
 - Mix all ingredients for salsa with 2 tbsp of cajun spice mix, adding breadcrumbs if salsa is too wet
 - Add 2 tbsp cajun spice mix to mayonnaise and mix thoroughly
 - Serve tenderloins with salad on the side and drizzled with spiced mayonnaise
