Lamb Tagine

A lamb and vegetable tagine

Lamb Tagine

Ingredients

  • 1 kglamb chops
  • 1 tspChilli powder
  • 1 tspPepper powder
  • 2 tspCumin powder
  • 2 tbspHot paprika
  • 2 tbspGinger, minced
  • ½ tspTurmeric powder
  • 2 piecesCinnamon
  • 300 gmsOnion, diced
  • 2 tbspGarlic, minced
  • 500 mlTomato puree
  • 1 cupChicken stock
  • 400 gmsChat potatoes, halved
  •  Oil
  •  Salt

Preparation

  1. Grind cinnamon and mix with chilli powder, pepper, cumin, paprika, ginger, turmeric.
  2. Apply to lamb chops and marinate for 1 hour
  3. Heat oil and fry onions and minced garlic till soft
  4. Add marinated lamb chops along with the marinade and chat potatoes and heat for 5 minutes
  5. Move to a tagine
  6. In the same pan, add the tomato puree and chicken stock and deglaze the pan
  7. Add to tagine
  8. Cover tagine with lid and place in an oven at 160° for 3 hours
