Quick Nasi Goreng

A prawn fried rice, hawker stall style

Nasi Goreng

Ingredients

  • 400 gmsPrawns, shelled
  • 2Eggs
  • 2 cupsBoiled rice
  • 2 tbspLight soy sauce
  • 1 tbspDark soy sauce
  • 1 tbspFish sauce
  • 4Red chillies, sliced
  • 150 gmsCarrots, sliced
  • 2 tbspDried shallots

Preparation

  1. Heat oil in a wok
  2. Beat the eggs and pour into pan
  3. Before it is cooked, break it into small pieces and remove
  4. Add more oil if needed and add sliced carrots and chillies
  5. Saute till soft
  6. Add prawns and stir till cooked
  7. Add rice and pour in light and dark soy sauces and the fish sauce
  8. Toss carefully without breaking the rice grains and the sauces are mixed evenly
  9. Serve on a plate and garnish with dried shallots

This is a quick recipe made with, preferably, leftover rice. The prawns can be replaced with chicken. It was a lunch box favourite with the Cub for many years before he got a bit tired of it.
