A prawn fried rice, hawker stall style

Ingredients
- 400 gmsPrawns, shelled
 - 2Eggs
 - 2 cupsBoiled rice
 - 2 tbspLight soy sauce
 - 1 tbspDark soy sauce
 - 1 tbspFish sauce
 - 4Red chillies, sliced
 - 150 gmsCarrots, sliced
 - 2 tbspDried shallots
 
Preparation
- Heat oil in a wok
 - Beat the eggs and pour into pan
 - Before it is cooked, break it into small pieces and remove
 - Add more oil if needed and add sliced carrots and chillies
 - Saute till soft
 - Add prawns and stir till cooked
 - Add rice and pour in light and dark soy sauces and the fish sauce
 - Toss carefully without breaking the rice grains and the sauces are mixed evenly
 - Serve on a plate and garnish with dried shallots
 
This is a quick recipe made with, preferably, leftover rice. The prawns can be replaced with chicken. It was a lunch box favourite with the Cub for many years before he got a bit tired of it.
