A savoury mince pie with a mashed potato topping

Ingredients
- 1 kgBeef Mince
- 4 slicesBacon, chopped
- 500 gmsOnions, chopped
- 1 tbspGarlic, minced
- 1 tspChilli flakes
- 400 gmsLeek, sliced
- 200 gmsCarrots, grated
- 200 gmsMushrooms, chopped
- 2 x 400 gmsTomatoes, diced canned
- 1 kgPotatoes
- ½ cupCream
- 25 gmsButter
- Salt
- Pepper
Preparation
- Fry bacon in a pan
- Add some oil if needed and add onion and garlic
- Add mince and cook till brown
- Add chilli flakes and stir
- Add mushroom, carrot and leek and stir till soft
- Add tomatoes, bring to boil and then simmer for 30 minutes
- Boil potatoes. It takes about 8 to 12 minutes, depending on the size of the potatoes, if you use a pressure cooker
- Let it cool and mash with the cream and butter. Add a bit of salt and pepper to taste.
- Take an ovenproof bowl and pour the mince mixture into it
- Cover with the mashed potatoes, smooth down and make a pattern with the fork
- Spray top with oil
- Put it in a 220°C oven for 30 minutes till lightly brown
This can be made with beef or lamb mince. Line the bottom of the bowl with a couple of pieces of toast. This will absorb the juices and keep it relatively dry. The soaked toast tastes good as well. You may have to turn on the grill for the last 5 minutes to brown the top.
