Ingredients
- 1 kgBeef Mince
- 400 gmsCorn chips
- 2Onions, diced
- 2 tbspGarlic, minced
- 2Fresh jalapenos, sliced
- 400 gmsDiced tomatoes
- 250 gms4 Bean mix
- 400 gmsRefried beans
- ½ tspCumin powder
- ½ tspChilli powder
- 100 gmsTaco sauce
- 100 gmsSliced pickled jalapenos
- 250 gmsGrated cheese
- Sour cream
- Oil
Preparation
- Heat oil in a pan. Add minced garlic, fresh jalapenos followed by diced onion. Stir till onions are softened.
- Add mince, cumin and chilli powder and stir till brown
- Add bean mix, refried beans, tomatoes
- Simmer for 30 minutes and turn off heat
- Arrange corn chips on a plate. Add mince mixture.
- Sprinkle pickled jalapenos and add some taco sauce
- Sprinkle cheese and place under a hot grill for five minutes
- Remove and add sour cream
Once the mince mix is made, assembling the nachos is the next step. Here is the plate with the corn chips spread out.
Spread the mince mixture on the corn chips
Pour some taco sauce and spread some pickled jalapenos
Cover the whole thing with a scattering of grated cheese
Place it under a grill to melt the cheese. Some of the chip edges do brown a bit bit as long as they are not burnt, it only makes them crunchier.
So there is the finished product. Yes, there are two plates, one on top of another, in the picture. The plate gets pretty hot under the grill so place it on another plate before moving it to the dinner table and tucking in.
This makes enough for 8 serves. You can halve the amount, or better still, pop the other half in the fridge for another day. Remember to heat up the mince mixture in the microwave before using it. The short stint under the grill is not enough to heat it up.
