Lo Bak Go - a Yum Cha favourite

Ingredients
- 800 gmsRadish or Daikon
- 2 tbspDried Shrimp
- 100 gmsChinese sausage (Lap Cheong)
- 200 gmsShallots
- 2 cupsRice flour
- ½ tspWhite pepper
- 1 tspSugar
- 1 tspSalt
Preparation
- Soak dried shrimp in water for 20 mins, drain and chop
- Grate radish coarsely
- Cook in pan with one cup water, stirring occasionally
- Remove from pan, add oil and heat
- Saute chopped shrimp and add chopped chinese sausage
- Add chopped shallots and stir
- Add this to the radish in a mixing bowl and add all other ingredients and mix
- Press into an oiled pan and steam for 1 hour
- Turn out and rest till cool
- Cut into slices and pan fry
