Oven baked stuffed fish

Ingredients
- 1Whole barramundi, butterflied
 - 100 gmsOnion, finely diced
 - 1½ tbspGarlic, minced
 - 2 tspPeppercorns, crushed
 - ½ cupCashews, crushed
 - 2 tbspFresh coriander, chopped
 - 50 gmsButter
 
Preparation
- In a pan, melt butter and add ½ tbsp garlic and 1 tsp peppercorns and stir
 - Remove from heat
 - In a separate pan, heat oil and fry diced onions, 1 tbsp minced garlic and 1 tsp crushed peppercorns
 - Add crushed cashews, fresh coriander and stir
 - Remove from heat
 - Place a large sheet of aluminium foil and place a smaller sheet of baking paper on it
 - Place barramundi on the paper, make three slashes on each side
 - Brush both sides with the melted butter
 - Stuff barramundi with the mixture
 - Wrap up paper and twist the ends
 - Wrap up aluminium foil and place in oven at 180°C and bake for 20 minutes
 - Remove and rest for 5 minutes before cutting open the foil and paper
