Fig Sorbet

A fresh fruit sorbet

Fig Sorbet

Ingredients

  • 600 gmsFigs
  • 1 cupSugar
  • 1 cupWater
  • 1 tbspLemon juice

Preparation

  1. Heat water and add sugar
  2. Stir till sugar is completely dissolved and chill
  3. Grind figs into a paste and add the sugar solution and lemon juice and mix thoroughly
  4. Put in an ice cream maker
  5. Remove, add remaining ghee and roast semolina mixing constantly till heated through

Given a choice between fruit ice cream and sorbet, Cub always opts for a sorbet. With figs, if it was an ice cream I would go for the more intense flavour of dried figs and pair it with the Indian favourite of cashews giving the popular Kaju Anjeer icecream. But for a sorbet, dried figs can be overpowering so this sorbet is made with fresh figs. The seeds are hard to avoid and are a problem either way. I have chosen to not grind it fine and retain most of the seeds.
