A fresh fruit sorbet

Ingredients
- 600 gmsFigs
 - 1 cupSugar
 - 1 cupWater
 - 1 tbspLemon juice
 
Preparation
- Heat water and add sugar
 - Stir till sugar is completely dissolved and chill
 - Grind figs into a paste and add the sugar solution and lemon juice and mix thoroughly
 - Put in an ice cream maker
 - Remove, add remaining ghee and roast semolina mixing constantly till heated through
 
Given a choice between fruit ice cream and sorbet, Cub always opts for a sorbet. With figs, if it was an ice cream I would go for the more intense flavour of dried figs and pair it with the Indian favourite of cashews giving the popular Kaju Anjeer icecream. But for a sorbet, dried figs can be overpowering so this sorbet is made with fresh figs. The seeds are hard to avoid and are a problem either way. I have chosen to not grind it fine and retain most of the seeds.
