Iceland Meat Soup

Ingredients

  • 2Lamb shanks (1.2 kg)
  • 200 gmsOnions, coarsely diced
  • 300 gmsPotatoes
  • 300 gmsCarrots
  • 300 gmsSwedes
  • 2Rosemary sprigs
  • 2Thyme sprigs
  • 2Fresh bay leaves
  • ½ cupRolled oats
  •  Oil
  •  Salt
  •  Pepper

Preparation

  1. Chop carrots, potatoes and swedes into 2 cm cubes
  2. Cut lamb shanks across around the middle
  3. Heat oil in a pot and brown lamb shanks
  4. Remove lamb shanks and fry coarsely chopped onion till brown
  5. Add lamb shanks back along with rosemary, thyme, bay leaves and add 3 litres of water
  6. Bring to boil and then simmer for 45 minutes
  7. Add chopped vegetables, rolled oats and simmer for 30 minutes
  8. Pull out lamb shanks
  9. Peel off outer layer if not already done so and discard along with bone
  10. Cut lamb into 2 cm chunks and add back to pot
  11. Add salt and pepper and simmer for another 5 minutes
