Ingredients
- 2Lamb shanks (1.2 kg)
- 200 gmsOnions, coarsely diced
- 300 gmsPotatoes
- 300 gmsCarrots
- 300 gmsSwedes
- 2Rosemary sprigs
- 2Thyme sprigs
- 2Fresh bay leaves
- ½ cupRolled oats
- Oil
- Salt
- Pepper
Preparation
- Chop carrots, potatoes and swedes into 2 cm cubes
- Cut lamb shanks across around the middle
- Heat oil in a pot and brown lamb shanks
- Remove lamb shanks and fry coarsely chopped onion till brown
- Add lamb shanks back along with rosemary, thyme, bay leaves and add 3 litres of water
- Bring to boil and then simmer for 45 minutes
- Add chopped vegetables, rolled oats and simmer for 30 minutes
- Pull out lamb shanks
- Peel off outer layer if not already done so and discard along with bone
- Cut lamb into 2 cm chunks and add back to pot
- Add salt and pepper and simmer for another 5 minutes
