Ingredients
- 1 kgPork chops
- 12Dried red chillies
- 2 tbspHoney
- ½ cupSugar
- 2 tbspGinger, minced
- 2 tbspGarlic, minced
- 2 tbspFish sauce
- 2 tbspCooking wine
- 3Brioche rolls
- 3 tbspPate
- 1Cucumber
- 1Carrot
- 1 bunchFresh coriander
- 2 tspSoya sauce
Preparation
- Soak dried red chillies in hot water for 15 minutes
- Grind chillies roughly with honey, ginger, garlic, fish sauce, cooking wine and sugar
- Marinate chops in mixture and refrigerate for 24 hours
- Grill chops on a hot BBQ for 2 minutes on each side
- Put grilled chops along with remaining marinade and two cups of water in a roasting pan
- Put on a low heat on the BBQ with the hood down for 1 hour, turning chops over occasionally till sauce thickens
- Remove and slice chops into small pieces against the grain
- Smear 1 tbsp of pate on each brioche
- Add sliced cucumber and carrots
- Add pork pieces along with a few sprigs of coriander and drizzle with some soya sauce
Walking through the shopping centre in front of the butcher's shop, I spied some rather large pork chops - not sure about what cut it was - but it looked good with a nice rind. I thought it would make a pretty decent sweet chilli pork on the BBQ. I decided to go a step further and slow cook it in the marinade.
I mariated the chops in a ziplock bag which I placed in the fridge overnight.
The next day, I pulled them out and brushed most of the marinade off - it will only burn when placed on a hot BBQ.
I BBQed the chops on a hot BBQ enough for some grill marks on both sides.
Then it was into a roasting pan with the remaining marinade added along with 2 cups of water. It then went back on the BBQ on a low heat for about an hour. During the time, the chops were turned over and the contents of the pan stirred to prevent the marinade from sticking to the bottom and burning.
I decided to slice up the pork and make a bahn mi. I used brioche buns for a change.
Smear the pate on to the bun.
Add the sliced cucumber and carrot. Add pieces of pork, some sprigs pf coriander and drizzle a few drops of soy sauce.
And there you have it. A bahn mi loaded with slow cooked sweet chilli pork with two more to follow.
