Ingredients
- Spice Mix
- 1 tspChilli powder
- 1 tspMustard powder
- 1 tspCumin powder
- 1 tbspDried garlic flakes
- 1 tbspDried onion flakes
- 1 tspPepper powder
- 1 tspPaprika
- 1 tspSalt
- 400 gmsWhite fish fillets
- 1Egg
- ½ cupPolenta
- 1 cupShredded lettuce
- 1Tomato, sliced
- ½ cupMayonnaise
- 2Half baguettes
Preparation
- Mix and grind all ingredients for the spice mix
- Mix polenta with 2 tbsp of the spice mix
- Cut fish into bite sized pieces
- Beat egg
- Heat pan and add some oil
- Dip fish pieces in egg and then roll in polenta mix
- Fry in pan till the outer layer is crisp
- Place fried fish pieces on absorbent paper
- Add 1 tbsp of the spice mix into the mayonnaise and mix
- Cut baguettes in half
- Smear mayonnaise mix on both sides
- Add fish pieces, shredded lettuce and sliced tomato
A Po'boy is a sandwich and comes with various fillings. The most common is fried seafood. I have used fish pieces here. The original is usually covered in cornmeal but I have used polenta - easier to find here and results in a nice crunchy crust.
Start with a baguette - the half baguette is a convenient size for one person. 400 gms of fish should make two sandwiches so you can go for a full baguette.
I used my Cajun mix to provide both the fish crust and the mayo with some bite. Mix the spice mix into the mayo and put the spiced mayo on both sides.
The main ingredient is seafood. I opted for fish which keeps it nice and light.
Add the shredded lettuce and sliced tomato.
Place the other half on top and there you have it - a fish po'boy.
