Chilli con carne

Chilli con carne

Ingredients

  • 1 kgBeef, finely diced
  • 100 gmsBacon, chopped
  • 200 gmsOnion, diced
  • 2 clovesGarlic, sliced
  • 2Chillies, sliced
  • 400 gmsCanned tomatoes
  • 400 gmsFour bean mix
  • 1 tspChilli powder
  • 1 tspCumin powder
  • 1 tspCoriander powder
  •  Salt
  •  Oil

Preparation

  1. Add a little oil into a pan and fry bacon till soft
  2. Add onion, garlic and chillies and fry till soft
  3. Add diced beef and brown
  4. Add tomatoes, chilli, cumin and coriander powder
  5. Add a bit of water and simmer for 30 minutes to an hour adding water as needed
  6. Add beans and salt to taste and heat for 10 minutes
  7. Serve with rice

The beef stays tender if marinated overnight. I bought a 1 kg roast beef that came pre-marinated in onion and garlic in a shrink wrap pack. Dice into 1 cm squares.

Any chilli left over makes a great plate of nachos the next day.
