A mexican beef and beans dish

Ingredients
- 1 kgBeef, finely diced
 - 100 gmsBacon, chopped
 - 200 gmsOnion, diced
 - 2 clovesGarlic, sliced
 - 2Chillies, sliced
 - 400 gmsCanned tomatoes
 - 400 gmsFour bean mix
 - 1 tspChilli powder
 - 1 tspCumin powder
 - 1 tspCoriander powder
 - Salt
 - Oil
 
Preparation
- Add a little oil into a pan and fry bacon till soft
 - Add onion, garlic and chillies and fry till soft
 - Add diced beef and brown
 - Add tomatoes, chilli, cumin and coriander powder
 - Add a bit of water and simmer for 30 minutes to an hour adding water as needed
 - Add beans and salt to taste and heat for 10 minutes
 - Serve with rice
 
The beef stays tender if marinated overnight. I bought a 1 kg roast beef that came pre-marinated in onion and garlic in a shrink wrap pack. Dice into 1 cm squares.

Any chilli left over makes a great plate of nachos the next day.
