Cheesy Cheela

Ingredients

  • 4Egg whites
  • 4 tspBesan
  • ½ cupOnions, chopped
  • ½ cupTomatoes, chopped
  • 4Green chillies, sliced thinly
  • ¼ tspTurmeric powder
  • ½ tspCumin powder
  • 1 tspBaking powder
  • ½ cupCoriander, chopped
  • ½ cupGrated cheese
  • Oil
  • Salt

Preparation

  1. Mix all ingredients, except the cheese, with 1 cup of water
  2. Heat an oiled pan, pour mixture
  3. Once partly set, turn over, sprinkle cheese and cover
  4. Fold in half
  5. Serve in hamburger buns with tomato suace

Besan or chickpea flour is a common ingredient in Indian dishes. It adds a nutty flavour and is high in fibre. A cheela is a pancake made with besan and is eaten as a snack. It is also referred to as a tomato omlette, which is very similar. Contrary to its name, it does not have any egg.

In my case, I needed egg yolks for a pudding for dessert and this was a great way to use the egg whites the next morning as a breakfast dish. The besan adds some flavour to the bland egg whites. The tomato omlette is often served with slices of bread, chutney (a green relish) and tomato sauce. So I served these with toasted hamburger buns and tomato sauce.
