An egg and besan pancake

Ingredients
- 4Egg whites
- 4 tspBesan
- ½ cupOnions, chopped
- ½ cupTomatoes, chopped
- 4Green chillies, sliced thinly
- ¼ tspTurmeric powder
- ½ tspCumin powder
- 1 tspBaking powder
- ½ cupCoriander, chopped
- ½ cupGrated cheese
- Oil
- Salt
Preparation
- Mix all ingredients, except the cheese, with 1 cup of water
- Heat an oiled pan, pour mixture
- Once partly set, turn over, sprinkle cheese and cover
- Fold in half
- Serve in hamburger buns with tomato suace
Besan or chickpea flour is a common ingredient in Indian dishes. It adds a nutty flavour and is high in fibre. A cheela is a pancake made with besan and is eaten as a snack. It is also referred to as a tomato omlette, which is very similar. Contrary to its name, it does not have any egg.
In my case, I needed egg yolks for a pudding for dessert and this was a great way to use the egg whites the next morning as a breakfast dish. The besan adds some flavour to the bland egg whites. The tomato omlette is often served with slices of bread, chutney (a green relish) and tomato sauce. So I served these with toasted hamburger buns and tomato sauce.
