A quick Korean snack

Ingredients
- 1 cupKimchi
- 200 gmsGreen shallots, chopped
- 1 cupSelf raising flour
- 1 cupRice flour
- 1 tspPepper powder
- 2 tspSoy sauce
- Oil
- Salt
Preparation
- Remove kimchi from the liquid and chop into small pieces
- Slit green shallots lengthwise and chop into 2 cm pieces
- Mix all ingredients except the oil
- Add as much of the reserved liquid from the kimchi and any additional water to make a smooth, pourable batter
- Keep aside for 1 hour
- Heat oil in a large frypan and pour a cup of the batter, spreading it about ½ cm thick
- Flip over when done on one side
- Remove and cut into 5cm squares
Kimchi is the pickled cabbage leaves with chilli that is a staple Korean side dish. It holds a hallowed position in Korean cuisine and is often served with every dish. It keeps in the fridge for months. One of the dishes you can make with it is the kimchi pancake (kimchijeon). This is a very simple dish, quickly made. Leave out the chopped green shallots or substitute them with onions and you would have every ingredient sitting around. You can serve it as a starter or even make a meal out of it.
