A tomato based lamb dish

Ingredients
- 1 kgLamb Shanks
 - 2 kgTomatoes, chopped
 - 1 tspShahjeera
 - 2Bay leaves
 - 6Cloves
 - 1 pieceCinnamon
 - 1 tspPeppercorns
 - 400 gmsOnion, chopped
 - 4 tbspGarlic, minced
 - 4 tbspGinger, minced
 - 1 tbspCoriander powder
 - 1 tbspChilli powder
 - 1 tspTurmeric
 - 1 tspGaram masala
 - Chopped coriander leaves
 - Oil
 - Salt
 
Preparation
- Heat oil
 - Add shahjeera and bay leaves
 - Add cloves, cinnamon, black pepper and fry till they pop
 - Add chopped onion and fry till soft
 - Add minced garlic and ginger and fry for a while
 - Add lamb shanks and fry till the colour changes a little
 - Add coriander powder, chilli powder and turmeric and fry
 - Add chopped tomatoes with the juice and simmer till lamb is cooked
 - Add salt and garam masala
 - Garnish with fresh chopped coriander leaves
