Not your traditional tagine

Ingredients
- 500 gmsDiced kangaroo
 - 1 tspCinnamon powder
 - 1 tbspGinger, minced
 - 1 tspChilli powder
 - 1 tspCumin powder
 - 1 tbspPaprika
 - 200 gmsCherry tomatoes
 - 200 gmsEschallots
 - 200 gmsCarrot, diced
 - 200 gmsCapsicum, sliced
 - 375 mlRed wine
 - 200 mlChicken stock
 - 2 tbspTomato paste
 - Salt
 
Preparation
- Add cinnamon powder, ginger, chilli powder, cumin powder, paprika to the diced kangaroo, mix and marinate for an hour
 - Heat the red wine and reduce it to half
 - Place diced kangaroo in a tagine
 - Cover with shallots, cherry tomatoes, carrots
 - Sprinkle sliced capsicum on top
 - Add salt, stock, tomato paste and reduced wine
 - Put lid on tagine and place in a 160°C oven for 2 hours
