Chicken Tagine

A chicken and vegetable tagine

Chicken Tagine

Ingredients

  • 1 kgChicken legs, skinned
  • 200 gmsOnions, diced
  • 2 tbspGinger, minced
  • 2 tspCoriander powder
  • 2 tspCumin powder
  • 1 tspGround cinnamon
  • 400 gmsTomatoes, diced
  • 2 tbspGarlic
  • 2 tbspBiber Silcasi (optional)
  • 2 tbspPomegranate Molasses (optional)
  • 2 tspChilli flakes
  • 1 cupChicken stock
  • 200 gmsPotatoes, thickly sliced
  • 200 gmsPumpkin, diced
  • 100 gmsShallots
  •  Oil
  •  Salt

Preparation

  1. Brown chicken legs in some oil and keep aside
  2. Add more oil to the pan and add diced onions and ginger and fry till soft
  3. Add coriander powder, cumin powder, cinnamon and stir
  4. Add tomatoes, garlic, biber, molasses, chilli flakes, chicken stock and salt and stir
  5. Simmer for 5 minutes
  6. Add chicken, potatoes, pumpkin, shallots into a tagine
  7. Add prepared gravy and mix
  8. Cover tagine with lid and place in an oven at 160° for 2 hours

The tagine was a birthday gift from friends. The ingredients do wander away from the traditional and I usually resist adding the sweet ingredients but feel free to add them.

The slow cooking means that you have to start well in advance. The dish is best served with afghani bread. Sprinkle some water on the bread and pop it in the oven for a few minutes after the tagine is done.
